Broccoli Chickpea Pasta with Garlic Olive Oil is a comforting, plant-based pasta dish made with tender broccoli, hearty chickpeas, and garlic-infused olive oil. It’s simple, nutritious, and packed with flavor, making it a perfect vegan-friendly main course.

Ingredients

  • 250g pasta (penne, rotini, or fusilli)
  • 300g broccoli florets
  • 1 can (400g) chickpeas, drained and rinsed
  • 45 cloves garlic, minced
  • 60ml olive oil
  • 1/4 tsp red pepper flakes
  • 60ml vegetable broth
  • 1 tbsp lemon juice
  • 30g grated Parmesan cheese (optional)
  • Salt and black pepper to taste

Instructions

  1. Cook pasta until al dente, reserving 1/2 cup pasta water, then drain.
  2. Sauté garlic and red pepper flakes in olive oil for 1 minute.
  3. Add broccoli and cook 5–7 minutes until tender-crisp.
  4. Add chickpeas, vegetable broth, and lemon juice. Simmer 2–3 minutes.
  5. Toss in pasta and mix well, adding reserved pasta water if needed.
  6. Season with salt and pepper and serve warm.

Notes

  • Use nutritional yeast instead of Parmesan for a fully vegan version.
  • Gluten-free pasta works as a substitute.
  • Roasting broccoli first adds extra depth of flavor.
