  • 4 cups mixed salad greens
  • 1 cup fresh blueberries
  • 2 ripe peaches, sliced into thin wedges
  • 1/2 cup crumbled feta cheese
  • 1/4 cup walnuts, toasted and chopped (optional)
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Wash and dry the blueberries and salad greens.
  2. Slice peaches into thin wedges.
  3. Toast and chop walnuts if using.
  4. In a large bowl, combine greens, blueberries, and peaches.
  5. Add feta cheese and walnuts.
  6. Whisk olive oil, lemon juice, honey, Dijon mustard, salt, and pepper until emulsified.
  7. Drizzle dressing over salad and toss gently.
  8. Serve immediately or chill for 30 minutes for enhanced flavor.
