  • 4 cups fresh arugula
  • 1 cup blackberries
  • 1 ripe avocado, sliced
  • 1/4 cup red onion, thinly sliced
  • 1/3 cup feta cheese, crumbled (optional)
  • 1/4 cup walnuts or pecans, chopped (optional)
  • 3 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper, to taste

Instructions

  1. Rinse arugula and blackberries under cold water and gently pat dry.
  2. Slice avocado in half, remove pit, scoop out flesh, and cut into thin slices.
  3. Thinly slice red onion.
  4. In a large bowl, combine arugula, blackberries, avocado, and red onion.
  5. If using, add feta cheese and chopped nuts.
  6. Whisk olive oil, balsamic vinegar, salt, and pepper in a small bowl.
  7. Drizzle dressing over salad and toss gently to combine.
  8. Adjust seasoning to taste and serve immediately.
