  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (11 oz) corn, drained
  • 1 cup fresh spinach, chopped
  • ¼ cup fresh cilantro, chopped
  • 1 cup Greek yogurt
  • 2 tbsp olive oil
  • ½ tbsp minced garlic
  • 1 tsp cumin
  • ½ tsp smoked paprika
  • 1 tsp sugar
  • 1 tsp salt
  • Juice of 2 limes
  • ½ cup mayonnaise (optional)

Instructions

  1. Cook pasta according to package instructions, then rinse under cold water and drain.
  2. In a bowl, mix Greek yogurt, olive oil, garlic, cumin, paprika, sugar, salt, and lime juice until smooth.
