This hearty, simple Spanish rice is a flavorful side dish loaded with tomatoes, spices, and vegetables. It pairs perfectly with any meal and delivers authentic, comforting flavor.

  • 3 tablespoons butter
  • 1 tablespoon olive oil
  • 1 1/2 cups long-grain white rice
  • 1/2 cup onion, finely chopped
  • 1 bell pepper, finely diced
  • 2 teaspoons minced garlic
  • 14.5 ounces fire-roasted diced tomatoes (not drained)
  • 8 ounces tomato sauce
  • 2 cups chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1 teaspoon cumin

Instructions

  1. Melt butter with olive oil in a large pan with a lid over medium heat.
  2. Add rice, onion, and bell pepper. Cook until rice is golden and vegetables are tender, stirring frequently for 15–20 minutes.
  3. Add garlic and cook for 1 minute.
  4. Stir in diced tomatoes, tomato sauce, chicken broth, salt, pepper, chili powder, paprika, and cumin.
  5. Bring to a boil, then cover and reduce heat to a simmer.
  6. Cook for 20–25 minutes or until rice is tender and liquid is absorbed.
  7. Remove from heat and let sit covered for 5–10 minutes.
  8. Fluff with a fork and serve.

Notes

  • Stir frequently while browning rice to prevent burning.
  • You can substitute vegetable broth for chicken broth if needed.
  • Slow cooker option: transfer after sautéing and cook on high for 2.5–3 hours.
