  • 1/3 cup plain Greek yogurt or mayonnaise
  • 4 Tbsp sweet chili sauce
  • 2 tsp sriracha
  • For the Salmon Bites:
  • 1 Tbsp avocado oil
  • 1 lb salmon filet, cubed
  • 1/2 cup coconut aminos
  • 1 Tbsp rice vinegar
  • 2 cloves garlic, minced
  • 1 tsp sriracha (optional)
  • 2 tsp toasted sesame oil (optional)
  • For the Bowls:
  • 1 batch Asian cucumber salad
  • 3 cups cooked brown rice
  • 1 head broccoli, chopped
  • 1 avocado, sliced

Instructions

  1. Whisk coconut aminos, rice vinegar, garlic, sriracha, and sesame oil in a bowl.
  2. Cut salmon into bite-sized cubes.
  3. Heat avocado oil in a skillet over medium-high heat.
  4. Sear salmon 2–3 minutes until golden, then flip and cook 1–2 minutes.
  5. Add sauce and simmer until salmon is fully cooked and glazed (about 4–5 minutes total).
  6. Assemble bowls with rice, cucumber salad, broccoli, and avocado.
  7. Add salmon and drizzle with bang bang sauce.
  8. Top with green onions and sesame seeds if desired.

Notes

  • Salmon is done at 145°F internal temperature.
