A golden, high-protein baked cottage cheese egg casserole made with eggs, cottage cheese, and cheddar cheese. Perfect for meal prep, busy mornings, and a filling breakfast.

Ingredients

  • 6 large eggs
  • 2 cups cottage cheese (about 450 g)
  • 1 cup sharp cheddar cheese, grated
  • Salt and pepper to taste
  • Optional: spinach, bell peppers, mushrooms, turkey bacon, or smoked turkey

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Grease a baking dish.
  3. Mix eggs, cottage cheese, and cheddar until fully combined.
  4. Season and add any optional ingredients.
  5. Pour into dish and spread evenly.
  6. Bake for 25–30 minutes until golden and set.
  7. Let cool slightly, then slice and serve.
