Quick and easy air fryer vegetables that come out tender, flavorful, and perfectly roasted in under 25 minutes.

Ingredients

  • 1 cup broccoli florets
  • 1 cup cremini mushrooms, halved or quartered
  • 1/2 cup carrots, thinly sliced
  • 1 small zucchini, sliced
  • 1 small red bell pepper, diced
  • 1 small red onion, diced
  • 2 teaspoons olive oil
  • 1 tablespoon balsamic vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1 tablespoon grated Parmesan cheese (optional)
  • Salt and black pepper to taste

Instructions

  1. Preheat air fryer for 5 minutes.
  2. Toss vegetables with olive oil, balsamic vinegar, garlic, Italian seasoning, garlic powder, salt, and pepper.
  3. Cook in air fryer at 390°F for 7–8 minutes.
  4. Shake basket, add Parmesan cheese, and cook another 3–8 minutes until tender.

Notes

  • Use only vegetables you prefer.
  • Balsamic vinegar can be omitted if desired.
  • Mix garlic with oil for better flavor distribution.
  • Cut vegetables evenly for consistent cooking.
  • Remove quicker-cooking vegetables early if needed.
  • Store leftovers in fridge up to 3 days.
