15 oz ricotta cheese
2 large eggs
4 cloves garlic, minced
1.5 tsp kosher salt
1.25 tsp black pepper
1 tsp dried oregano
2 lb 80/20 ground beef
1.25 cups breadcrumbs
3 tbsp unsalted butter, softened
3 tbsp mayonnaise
1/2 cup finely grated parmesan
3 garlic cloves, grated
1/2 tsp red pepper flakes
2 tbsp fresh parsley, chopped
4 large hoagie rolls
18 oz marinara sauce
6 oz shredded mozzarella cheese
Fresh parsley and extra parmesan for garnish
Instructions
Preheat oven to 400°F. Mix butter, mayonnaise, parmesan, grated garlic, red pepper flakes, and parsley for garlic spread.
In a bowl, combine ricotta, eggs, minced garlic, salt, pepper, oregano, ground beef, and breadcrumbs. Form into 55-70 meatballs and bake 20-25 minutes until cooked.
Slice rolls, spread garlic butter, and bake 10-12 minutes until golden.
Toss cooked meatballs with marinara sauce, fill rolls, top with mozzarella cheese.
Bake 10 minutes at 400°F until cheese melts and browns. Garnish with parsley and extra parmesan before serving.
Notes
Use ice cream scoop for uniform meatballs.
