Delicious Garlic Bread Meatball Subs combine juicy ricotta and beef meatballs with a rich marinara sauce, melted mozzarella, and garlic-buttered hoagie rolls for the ultimate comfort sandwich.

  • 15 oz ricotta cheese
  • 2 large eggs
  • 4 cloves garlic, minced
  • 1.5 tsp kosher salt
  • 1.25 tsp black pepper
  • 1 tsp dried oregano
  • 2 lb 80/20 ground beef
  • 1.25 cups breadcrumbs
  • 3 tbsp unsalted butter, softened
  • 3 tbsp mayonnaise
  • 1/2 cup finely grated parmesan
  • 3 garlic cloves, grated
  • 1/2 tsp red pepper flakes
  • 2 tbsp fresh parsley, chopped
  • 4 large hoagie rolls
  • 18 oz marinara sauce
  • 6 oz shredded mozzarella cheese
  • Fresh parsley and extra parmesan for garnish

Instructions

  1. Preheat oven to 400°F. Mix butter, mayonnaise, parmesan, grated garlic, red pepper flakes, and parsley for garlic spread.
  2. In a bowl, combine ricotta, eggs, minced garlic, salt, pepper, oregano, ground beef, and breadcrumbs. Form into 55-70 meatballs and bake 20-25 minutes until cooked.
  3. Slice rolls, spread garlic butter, and bake 10-12 minutes until golden.
  4. Toss cooked meatballs with marinara sauce, fill rolls, top with mozzarella cheese.
  5. Bake 10 minutes at 400°F until cheese melts and browns. Garnish with parsley and extra parmesan before serving.

Notes

  • Use ice cream scoop for uniform meatballs.
  • Allow cheese to set slightly before serving for easier handling.
