Creamy White Chicken Chili is a comforting, high-protein soup made with shredded chicken, white beans, green chiles, and warm spices in a creamy broth. Perfect for meal prep or cozy dinners.

  • 1 tablespoon olive oil
  • 1 small yellow onion, chopped
  • 2 garlic cloves, minced
  • 2 1/2 cups low-sodium chicken broth
  • 2 (4 oz) cans diced green chiles
  • 1 1/2 teaspoons ground cumin
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • Juice of 1/2 lime
  • Salt and black pepper to taste
  • 2 (15 oz) cans great northern beans
  • 1 cup corn
  • 2 cups cooked shredded chicken
  • 1 cup sour cream or Greek yogurt
  • Optional toppings: cilantro, cheese, avocado, tortilla chips, green onions

Instructions

  1. Heat olive oil in a pot and sauté onion for 3–5 minutes. Add garlic and cook 30 seconds.
  2. Add broth, green chiles, cumin, cayenne, paprika, oregano, lime juice, salt, and pepper. Simmer.
  3. Blend a portion of beans with broth until smooth, then add back to pot.
  4. Add remaining beans and corn. Simmer 15–30 minutes.
  5. Stir in shredded chicken and sour cream off heat.
  6. Serve with desired toppings.

  • Use Greek yogurt for a lighter version.
  • Blend beans for a thicker texture.
