Mushrooms:
1 tablespoon olive oil
8 oz baby bella or crimini mushrooms
Salt and pepper, to taste
Creamy orzo:
1 cup uncooked orzo
2 cups chicken broth or stock
5 cloves garlic, minced
1/2 teaspoon Italian seasoning
1/2 teaspoon paprika
1/4 teaspoon salt (or to taste)
5 oz fresh spinach
1/2 cup heavy cream
1/4 teaspoon red pepper flakes (or to taste)
Instructions
Heat olive oil in a large skillet over medium-high heat. Cook mushrooms with salt and pepper for 1–2 minutes until softened. Remove half and set aside.
Add orzo, broth, garlic, Italian seasoning, paprika, and salt to the skillet.
Bring to a boil, then reduce to a simmer. Cook 5–10 minutes, stirring occasionally until orzo is tender.
Add spinach during the last 5 minutes and stir until wilted.
Stir in heavy cream on low heat (do not boil).
Return reserved mushrooms, adjust seasoning, and serve with red pepper flakes.
Notes
Stir frequently to prevent orzo from sticking.
Vegetable broth can be used instead of chicken broth.
