Chicken Blueberry Feta Salad is a fresh and vibrant salad combining grilled chicken, sweet blueberries, creamy feta, and a tangy balsamic vinaigrette.

  • 1 lb boneless, skinless chicken breasts
  • 4 cups spring mix greens
  • 1 1/4 cups blueberries
  • 1/2 cup crumbled feta cheese
  • 1/2 cup dried cranberries
  • 1/2 cup chopped red onion
  • 1 cup chopped cucumber
  • 6 tbsp olive oil
  • 1/4 cup balsamic vinegar
  • 1/2 clove garlic, minced
  • 1 tbsp honey
  • 1/4 tsp salt
  • 1/8 tsp pepper

Instructions

  1. Whisk olive oil, balsamic vinegar, garlic, honey, salt, and pepper to make the vinaigrette.
  2. Season chicken with salt and pepper and grill for 6–8 minutes per side until fully cooked (165°F). Let rest, then slice.
  3. In a large bowl, add greens, blueberries, cranberries, red onion, cucumber, feta, and sliced chicken.
  4. Drizzle with vinaigrette and toss gently before serving.
