Ingredients
Scale
1 lb ground beef
1 small onion, diced
3 cloves garlic, minced
4 cups potatoes, peeled and diced
4 cups chicken broth
2 cups shredded cheddar cheese
1 cup milk
1 cup heavy cream
1 tbsp olive oil
Salt and pepper to taste
Instructions
Heat olive oil in a large pot over medium heat. Sauté onion and garlic until softened, 3–4 minutes.
Add ground beef, cook until browned, draining excess grease.
Stir in potatoes and chicken broth. Boil, then simmer 15–20 minutes until potatoes are tender.
Add milk and cream, heating through without boiling.
Gradually stir in cheddar cheese until melted and smooth.
Season with salt and pepper, simmer 5–10 minutes to thicken.
Serve hot, garnished with extra cheese, bacon bits, or green onions if desired.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently.
Optional: Add chopped carrots, celery, or swap ground beef for turkey or sausage for variety.
