Ingredients

  • 7 to 8 cups seedless watermelon, cut into ¾-inch cubes
  • 1½ cups fresh blueberries, plus more to taste
  • 1 cup crumbled feta cheese, plus more to taste
  • Fresh mint leaves, thinly sliced
  • Fresh basil leaves, thinly sliced
  • Juice of limes
  • 1 tbsp extra virgin olive oil
  • 1 to 2 tbsp honey, to taste
  • Pinch of salt

Instructions

  1. Make the honey lime dressing by combining lime juice, olive oil, honey, and salt in a mason jar.
  2. Shake vigorously until fully blended and adjust sweetness if desired.
  3. In a large serving bowl, combine watermelon cubes, blueberries, mint, basil, and ¾ cup of the feta cheese.
  4. Drizzle the honey lime dressing over the salad.
  5. Toss gently until evenly coated.
  6. Sprinkle the remaining feta cheese over the top.
  7. Garnish with additional mint and basil leaves if desired.
