2 chicken breasts, cut into bite-sized pieces
1 teaspoon paprika
1/2 teaspoon ground cumin
1/2 teaspoon oregano
1/4 teaspoon crushed chilies
Salt and pepper to taste
2 tablespoons butter, divided
1/2 teaspoon thyme
1/2 teaspoon rosemary
1/2 teaspoon basil
1/4 teaspoon ground fennel
3 tablespoons cream cheese
1 cup milk or buttermilk
1 cup basmati rice (uncooked)
1 clove garlic, minced (optional)
Instructions
Cook basmati rice according to package instructions and set aside.
Season chicken with paprika, cumin, oregano, chilies, salt, and pepper.
Cook chicken in 1 tablespoon butter for 6–8 minutes until browned and cooked through. Remove and set aside.
In the same pan, melt remaining butter and sauté garlic if using.
Add thyme, rosemary, basil, and fennel; cook for 1 minute.
Melt cream cheese into the pan, then slowly add milk or buttermilk, stirring until smooth.
Return chicken to the pan and simmer for 3–5 minutes.
