Authentic Greek Potatoes (Patates Lemonates) are a classic side dish with irresistibly crispy, golden-brown edges and a fluffy interior. Infused with tangy lemon, savory garlic, and earthy oregano, they perfectly complement roasted meats, grilled fish, or even a simple Greek salad.

Ingredients

Scale
  • 2.53 lbs Russet or Yukon Gold Potatoes
  • 1/2 cup (120ml) Freshly Squeezed Lemon Juice
  • 1/2 cup (120ml) Extra Virgin Olive Oil
  • 46 cloves Garlic, minced
  • 2 tablespoons Dried Oregano
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1/2 cup (120ml) Vegetable or Chicken Broth
  • Fresh Parsley or Oregano for garnish (optional)

Instructions

  1. Wash and scrub potatoes. Peel if desired. Cut into consistent 1-1.5 inch wedges or 1-inch chunks.
  2. Soak cut potatoes in cold water for 30-60 minutes to remove excess starch. Drain and pat extremely dry.
  3. Preheat oven to 400°F (200°C) with oven rack in middle position.
  4. In a large bowl, whisk lemon juice, olive oil, garlic, oregano, salt, and black pepper. Add dried potatoes and toss to coat evenly.
  5. Spread potatoes in a single layer on a large baking sheet or roasting pan without overcrowding.
  6. Roast for 20-25 minutes without disturbing.
  7. Flip potatoes and pour broth around them. Return to oven.
  8. Continue roasting 25-35 minutes, flipping every 10-15 minutes, scraping up browned bits.
  9. Roast until fork-tender and golden-brown, 50-60 minutes total. For extra crispiness, increase oven to 425°F (220°C) for last 10-15 minutes or broil 1-3 minutes.
  10. Remove from oven and let rest 5-10 minutes. Garnish with parsley or oregano and serve.

Notes

  • Adjust seasoning to taste before roasting.
  • Optional garnishes like fresh parsley, oregano, or crumbled feta can enhance flavor and presentation.
  • Perfect as a side for roasted chicken, lamb, grilled fish, or vegetarian dishes.
